In our last issue, (February 22, Volume III / Number 04), we spotlighted St. Patrick's Day (from its history to great recipes), because by the time this issue would be sent your way (March 15th), it would be too late to help you plan for the fun of the holiday. Well, we're looking at the same situation with this issue and Easter... By the time Issue #6 rolls around, it will be March 29th... two days before Easter and not enough time for planning and shopping. So we're celebrating early again! We want to bring you our best suggestions for Easter-related cooking, baskets, and all those eggs you'll have on hand!

 Flavors are the heart-and-soul of low-carb cooking especially in baking. Being somewhat more restricted in the fruit and sweet-based ingredients we can use to impart that "something special", we rely instead on essences of the tastes we remember.
