This month, we celebrate Cheese!
June is National Dairy Month... and a low carber's best friend in the dairy department is surely cheese. So we've devoted an entire issue to it!
It’s the staple of our favorite foods, yet it’s also the passion of gourmets. As the award-winning American Dairy Association campaign — "Ahh…the Power of Cheese™ " — reminds us, cheese is an American obsession. We can’t get enough of it.
We love cheese for its incomparable oral sensations, variety and versatility. Cheese is a wonder food because of its great variety of textures — from crunchy and browned to stringy and gooey.

as a part of your low carb diet!

Kaiser One-Handed Flour Sifter!
Our last Product of the Month was Expert Foods' Cake-ability, an
amazing mix allows you to mix 1/2 cup of their product with your favorite nut flours to
produce a cake with a texture that very closely resembles commercial cake-mix textures.
Yet in making these cakes, and others here at Low Carb Luxury, we discovered that the
secret to making low carb cakes considerably lighter, fluffier, and more "real", is in
the sifting!
Sifting together your nut flours (especially almond) with whey, oat flour, or other low
carb specialty flours produces a far less "dense" cake. Most of us have forgotten
about such things as sifting in an age when commercial flours come pre-sifted. But low
carb ingredients don't come that way. We couldn't get over the difference this makes.
Sifting can make light almond flours almost silky feeling — like baby powder! Plus, you
are assured that any large pieces of nut or clumps of flour (oat and soy flours can really
clump!) don't make it into your finished product.
So we set out to find the best sifter out there for the money. And I think we've found it
in the Kaiser One-Handed Flour Sifter. (I LOVE the "one-handed" part, because this
is actually easy!) One hand stays free while the other can spoon
in the dry ingredients to make perfectly smooth, lump-free batters.
The other great thing about this sifter (besides its economical price tag) is that while most sifters aren't safe for the dishwasher, this one is. The sifting mechanism
is constructed of compression molded plastic while the actual sifting mesh is made of stainless steel
making the entire sifter safe for the top shelf of the dishwasher.
